People from rural areas are often willing to do things that many urban residents might find awkward or unsanitary. For instance, these cowboys chose to drink beer from their boots. They might have been dared to use their footwear as drinking vessels. Alternatively, they might have been too inebriated to clearly differentiate between objects.
